About Honey: Honey is produced through the joint effort of flowers and bees. Flowers produce nectar, a sticky, sweet substance made primarily of sucrose, that bees gather for food. Bees gather the nectar, which provides them with carbohydrates, and pollen, which provides them with protein. Depending on the flowers and blossoms from which the bees gathered the nectar, honey can vary in color from water white to an opaque black, with a corresponding intensity in taste.
Raw honey has been noted for its ability to heal wounds and treat infections. It is also known for its antioxidant, antibiotic and antiviral capabilities. Honey is 18 - 20% water and is comprised of glucose and fructose, vitamins A, B-complex, C, D, E, K, and beta-carotene, minerals, and enzymes. Raw, unprocessed honey has the most medicinal and nutritional value.
Honey is readily assimilated, 99% pre-digested, and moves quickly into the bloodstream, giving athletes a quick source of energy and enabling them to recuperate rapidly from severe exertion with less evidence of fatigue.
It can be used cosmetically as a 15 minute facial pack to cleanse the face, firm facial muscles, and provide an astringent as well as bleaching effect. It is a prime ingredient in facial cleansers for oily skin and is used in hand lotions. It has been used with excellent results in the treatment of severe burns with no blisters resulting. Honey mixed with cod liver oil makes a salve which has been found to be effective in alleviating the pain and hastening the healing process of all kinds of wounds including cuts, bruises, lacerations and chapped skin.
Store honey in a dry place. Honey doesn't spoil. Freezing honey does not injure the color or flavor. Avoid damp places for storage because honey absorbs and retains moisture. Therefore, it is best not to put honey in the refrigerator. Water added to raw honey (still containing enzymes) will cause it to ferment, turning it into mead or vinegar.
